Ingredients

  • 3/4 cup canned crushed pineapple
  • 2 eggs
  • 3/4 cup sugar
  • 1/3 cup veg oil
  • 1/4 cup unsweeted applesauce
  • 1 tsp vanilla
  • 1 1/4 cup all purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cup grated carrots
  • 1 2 cup golden raisins
  • Pineapple Glaze
  • 1 cup icing sugar

Preparation

Step 1

Drain pineapple, pressing to extract juice, save juice
In a large bowl beat eggs with sugar. Beat in oil applesauce and vanilla. In a seperate bowl whisk tog flour cinnamon baking powder baking soda and salt. stir into egg mixture just until moistened. Stir in pineapple carrots and raisins. Scrape into parchment lined 9 inch square metal pan.
Bake at 350 until tester comes out clean about 45 minutes Let cool in pan 15 minutes.


Glaze
In a small bowl whisk tog icing sugar and 2 tbsp of the reserved juice adding up to 1 tsp more juice to make it spreadable if necessary. Spread over cake let stand until set about 1 hour.
