Couscous with Pine Nuts

Ingredients

  • 4 Tbls unsalted butter
  • 3/4 cup chopped shallots
  • 3 cups chicken broth
  • 1/2 tsp kosher salt
  • 1/2 tsp pepper
  • 1 1/2 cups couscous
  • 1/2 cup toasted pine nuts
  • 1/4 cup dried currants
  • 2 Tbls chopped flat-leaf parsely

Preparation

Step 1

1) Melt the butter in a large saucepan.
2) Add the shallots and cook them over medium-low heat for 3 minutes.
3) Add the chicken stock, salt and pepper and bring to a boil.
4) Turn off the heat; stir in the couscous, cover the pan and set aside for 10 minutes.
5) Add the pine nuts, currants, and parsley.
6) Fluff with a fork.
7) Serve hot.
