Lemon Cake Pie
- 1 C Sugar
- Butter the size of a "walnut" (that's what the recipe says -- we used 1 1/2 tablespoons)
- 2 Eggs separated
- 1 Lemon -- Juice and Grated Rind
- 1 TBSP heaping all purpose flour
- 1 C Milk
Mix sugar and flour, mix in butter, add egg yolks, lemon juice and rind, and milk, add beaten egg white pour in unbaked pie shell and bake at 375 for 45-55 minutes (take care it may brown fast). Let cool and set up.
As it bakes, the cake part will rise to the top leaving the creme part at the bottom.
