Green Chili Enchiladas

Green Chili Enchiladas 0 Picture


  • 4 Tablespoons of Butter
  • 6 Tablespoons of Flour
  • 1 Bunch Green Onions Chopped
  • 1 Cup Cheddar for Sauce
  • Chedder to Sprinkle on Casserole
  • 18 Corn Tortillas
  • Garlic to taste (1 to 2 tablesoons)
  • Green Chili to Taste (Can use frozen)
  • 5 Cups Milk



Step 1

In a deep pan melt Butter, add flour * brown it (until kind of a beige color)
Turn off heat and add 1 Cup of Milk and stir.
Turn heat back on, add rest of Milk a little at a time, wisk to remove lumps. Mixture will turn into a cream.
Add Chili, Garlic, Onions and the 1 Cup of Cheese and stir until melted.

Put a little of the sauce you just made in the bottom of a 13X9 Cassarole dish. Layer bottom of Cassarole with 6 tortilla's (or enough to cover the bottom of the cassarole)
Add sauce on top, add meat
