Ingredients

  • 1.3

    c pancetta

  • 1

    small onion, diced

  • 3

    cloves garlic, diced

  • 1

    rib celery diced

  • 1

    carrot diced

  • 3

    c chicken broth

  • 1

    c white wine

  • 4

    c spinach leaves, finely chopped

  • 1

    c cream (optional)

  • 1/2

    c parmesian cheese

Directions

In soup pot over med high heat, cook pancetta until it releases fat. Add onion, garlic, celery, & carrot. Stir frequently about 5 minutes. Pour in broth & wine; bring to boil. Reduce heat to medium & simmer 10 minutes. Add spinach; simmer 5 minutes. Add cream (if using), salt & pepper to taste. Simmer 5 minutes. Remove from heat. Ladle into bowls. Divide parmesan over each bowl. Top with croutons or toasted baguette.
