Parmesian Spinach Soup

To make a meatless soup, substitute 2 tblsp olive oil for the pancetta & use vegetable broth rather than chicken.

Ingredients
- 1.3 c pancetta
- 1 small onion, diced
- 3 cloves garlic, diced
- 1 rib celery diced
- 1 carrot diced
- 3 c chicken broth
- 1 c white wine
- 4 c spinach leaves, finely chopped
- 1 c cream (optional)
- 1/2 c parmesian cheese

Preparation
Step 1
In soup pot over med high heat, cook pancetta until it releases fat. Add onion, garlic, celery, & carrot. Stir frequently about 5 minutes.
Pour in broth & wine; bring to boil. Reduce heat to medium & simmer 10 minutes.
Add spinach; simmer 5 minutes.
Add cream (if using), salt & pepper to taste. Simmer 5 minutes.
Remove from heat. Ladle into bowls. Divide parmesan over each bowl. Top with croutons or toasted baguette.
