Ingredients
- Lemon Yogurt Sauce:
- 1/2 cup plain fat free yogurt
- 1 tbs Meyer lemon juice
- 1 1/2 tsp minced fresh mint
- 1/2 tsp finely grated Meyer lemon zest
- 1 clove garlic, minced
- Freshly ground sea salt and pepper to taste
- Turkey Burgers:
- 1 20 oz pkg ground turkey
- 1/3 cup minced red onion
- 1/4 cup each: chopped pitted Kalamata olives and crumbled feta cheese
- 2 tbs Meyer lemon juice
- 1 1/2 tsp each: finely grated lemon zest and greek seasoning
- 3 pita bread rounds, halved
- 1 cup lettue
- 1/2 cup diced tomato
Preparation
Step 1
1. Stir together all sauce ingredients in a small bowl, cover and refrigerate until ready to serve.
2. Stir together turkey, onion, olives, cheese, lemon juice and seasoning in a medium bowl and shape into 6 flat patties. Grill, broil or cook in a non-stick skillet fr 5 min on each side until cooked through.
3. Place a handful of greens into each pita half. Place a burger and diced tomatoes in each and top with yogurt sauce.
