    tbsp butter, softened, plus extra for greasing

    cup granulated sugar

    tsp vanilla extract

    large eggs

  • cups all purpose flour, sifted


Preheat the oven to 325 degrees Grease a 6x10 in loaf pan with butter. In a bowl, whisk the butter and sugar with an electric mixer, until light and fluffy. Whisk in the vanilla extract. Whisk in the eggs one at a time, making sure to incorporate as much air as possible. Fold the flour into the egg mixture until just blended in, and pour the batter into the pan. Bake in the center of the hot oven for 50 minutes to 1 hour until the cake is well risen and a skewer comes out clean. Allow the cake to cool in the pan for 5 minutes before turning it to cool on a wire rack. These cakes can be flavored as you like with lemon or orange zest or with almond extract.
