Sour Cherry and Chocolate Brownies

Ingredients

  • 11 tbsp unsalted butter, cut into cubes
  • 5 1/2 (150g) good quality dark chocolate, broken into pieces
  • 1 1/4 cups light brown sugar
  • 3 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1 1/4 cups self rising flour
  • 3 1/2 oz (100g) dried sour cherries
  • 3 1/2 oz (100g) dark chocolate chunks

Step 1

Preheat the oven to 350 degrees
Line a 9x12 in brownie pan, or similar with parchment paper. Melt the butter and chocolate in a heatproof bowl, over simmering water (the bowl should not touch the water).
Stir the sugar and cool sightly.

Mix the eggs and vanilla extract into the chocolate mixture. Pour the wet mix into the sifted flour and fold together, being careful not to over-mix. Fold in the sour cherries and chocolate chunks.

Pour the brownie mixture into the pan and bake in the center of the oven for 20-25 minutes. It is ready when the edges are firm, but the middle is soft to the touch.

Let the brownies cool in the pan for 5 minutes. Remove from the pan and cut into 16 squares, then transfer to a wire rack to cool.
These will store in a airtight container for up to 3 days.
