Ingredients

  • 3 cups all-purpose flour (unbleached, enriched) (or 1/2 whole grain flour)
  • 1 package instant yeast (2 1/2 tsp)
  • 1 tsp salt
  • 1 cup warm water

Preparation

Step 1

Directions:
•Mix dry ingredients together in a bowl
•Mix in water with a wooden spoon
•Continue incorporating the water by hand
•If more water is needed add 1 tablespoon of water at a time until the dough holds together in a ball
•Place the dough on a clean surface and knead for 10 minutes until the dough is smooth and resists kneading
•Cover and allow to rise in a warm place (not the oven) until doubled in size (1-2 hours)
•Punch dough down and knead for a few minutes



•Cover and allow the dough to rest 20 minutes
•Shape dough into 1 1/2 inch balls
•Place the balls on an oiled cookie sheet or muffin tin ( 3 balls per cup), cover and allow to proof for 30 minutes
•Preheat oven to 375 degrees F
•Make an angled slash 1/4 inch deep into the top of each roll
•Bake for 20-25 minutes or until golden
•Remove from pan and cool on racks
