Ingredients

  • 1/2 c chopped red pepper
  • 2 T butter
  • 7 c french bread cubes
  • 1 c shredded swiss cheese
  • 1 c monterey jack cheese
  • 5 eggs, beaten
  • 2 1/2 c milk
  • 1/4 c sliced green onion
  • 1 T dijon style mustard
  • 1/4 t freshly ground pepper
  • 2/3 c sour cream
  • 1/4 c parmesan cheese

Step 1

Saute red pepper in butter over med heat approx 2 mins or until crisp tender, remove.

Lightly butter a 13x9x2 baking dish. Place bread in dish; top w/ red pepper. Sprinkle with swiss and jack cheeses. Combine eggs,milk, onion, mustard & pepper. Carefully pour over cheese. Cover dish w/ foil and refrigersate overnight or up to 24 hrs.

Preheat oven to 325. Bake covered 50-60 mins or just until set. emove from oven and spread sour crem over top and sprinkle w/ parmesan cheese. Bake uncovered about 10 mins more or until crusty and lightly browned.
