Ingredients
- Dough:
- 2 1/4 cups semolina flour
- 3 eggs
- 1 Tbl water
- 1 Tbl Olive oil
- 3/4 tsp salt
- Filling:
- 3 LBS Ricotta chees
- 1/2 lb Imported Romano cheese
- 1 Tbl black pepper
- 3 lg eggs
- wash:
- 2 eggs

Preparation
Step 1
Dough:
mix in food processor and roll very thin #5 on pasta machine,
cut 4" round pieces fill with 1 tbl of filling, (see below)
Filling:
Mix well, stuff with 1 tablespoon onto 4" round dough piece. Fold in half and seal edge with fork tines.
Beat 2 eggs for wash and brush tops before baking.,
Bake 400 15 minutes or 375 15 - 20 minutes
