Ingredients

  • Dough:

  • 2 1/4

    cups semolina flour

  • 3

    eggs

  • 1

    Tbl water

  • 1

    Tbl Olive oil

  • 3/4

    tsp salt

  • Filling:

  • 3

    LBS Ricotta chees

  • 1/2

    lb Imported Romano cheese

  • 1

    Tbl black pepper

  • 3

    lg eggs

  • wash:

  • 2

    eggs

Directions

Dough: mix in food processor and roll very thin #5 on pasta machine, cut 4" round pieces fill with 1 tbl of filling, (see below) Filling: Mix well, stuff with 1 tablespoon onto 4" round dough piece. Fold in half and seal edge with fork tines. Beat 2 eggs for wash and brush tops before baking., Bake 400 15 minutes or 375 15 - 20 minutes
