Sticky Grilled Chicken

  • 3 lbs. chicken breast and thighs
  • 1/4 cup finely chopped coriander leaves
  • 2 cloves of garlic, finely chopped.
  • 1 tsp. coarsely ground pepper
  • 1 tsp salt
  • 2 tblsp peanut oil
  • 3 tblsp honey
  • 1 tblsp fish sauce
  • juice of 1 lime



Step 1

Cut chicken breasts in half across their width. Combine chicken pieces with coriander, garlic, pepper, salt and peanut oil. Toss welll and refriderate for 30 mins or up to a day.

When ready to grill, preheat barbecue to meduim. Combine honey, fish sauce, and lime juice in a small bowl and reserve. Grill chicken for 18-20 mins turning frequently. Brush honey mixture over chicken in the final 4 mins. and continue cooking until honey is caramelized, chicken is cooked thru and juices run clear. Remove to platter and loosely cover with foil til ready to serve.
