Ingredients

  • glaze:
  • 2 C all purpose flour
  • 2 t baking soda
  • 2 t cinnamon
  • 1/2 t salt
  • 3 eggs
  • 3/4 c veg oil
  • 3/4 c buttermilk
  • 2 t vanilla
  • 2 c (3 large) grated carrots
  • 8 oz drained crushed pineapple
  • 3.5 oz coconut
  • 1 c chopped nuts
  • 1 c sugar
  • 1 1/2 t soda
  • 1/2 c buttermilk
  • 1 T corn syrup
  • 1 t vanilla
  • 1/2 c butter
  • Icing:
  • 1/2 c butter
  • 8 oz soft cream cheese
  • lb powder sugar
  • 1 1/2 t vanilla

Preparation

Step 1

Stir together: flour,soda,cinnamon and salt.
Beat eggs,add sugar,oil,buttermilk,vanilla.
Add to flour mixture. Fold in carrots,pineapple,coconut,pecans. Pour into greased 9X13 pan. Bake 350 30 minutes, cover with foil and bake 13 minutes more.
Prepare glaze-Boil all ingredients 4 minutes then pour over hot cake (poke some holes into cake)
Cool cake then frost.
