SHRIMP*****Baked Shrimp Oreganato - Mediterranean Prescription

21/03/14 - This was great for both. An easy, make-ahead, tasty shrimp preparation we both like.

Ingredients

  • 1 tbsp. EVOO
  • 8 oz. Jumbo shrimp, peeled and cut in half width-wise
  • salt and pepper to taste
  • 1/3 cup panko
  • 1 tbsp chopped fresh parsley or basil
  • 1 clove garlic, minced
  • 15 grams grated parmesan cheese
  • 1/4 tsp. smoked Spanish paprika
  • 1 tsp dried oregano
  • lemon wedges, to serve, optional (Neither one of us has used them yet)

Preparation

Step 1

*Preheat* oven to 425. *Grease* baking dish with a little oil. *Season* shrimp with salt and pepper and place cut side up in dish.

*In a bowl*, mix the crumbs, parsley or basil, garlic, cheese, Olive Oil, paprika and oregano. *Sprinkle* mixture over shrimp. *Bake* 10-12 minutes, divide between two plates and serve.
