Coffee Batons

a family favorite Christmas cookie. Even those who don't like coffee like Coffee Batons!

Ingredients

  • coating:
  • 3 cups all-purpose flour
  • 2 cups whole wheat flour
  • 2 1/2 tablespoons instant decaf coffee
  • 1 teaspoon salt
  • 1 1/4 teaspoon baking powder
  • 1 1/4 cup softened margarine
  • 1 7/8 cup packed light brown sugar
  • 5/8 cup granulated sugar
  • 5/8 cup cream ( I use fat free half & half)
  • 2 1/2 cups semisweet chocolate chips
  • 5/8 cup water
  • 7/8 teaspoons vanilla
  • 3 3/4 cups finely chopped almonds or pecans
  • 5/8 cup granulated sugar

Preparation

Step 1

Stir flours with coffee powder, salt and baking powder. (if using coffee granules, rub through strainer with spoon or fingertips.) In a large mixing bowl beat butter, brown sugar, and 5/8 cup granulated sugar until light and fluffy. Stir in flour mixture 1/2 cup at a time, alternating with cream. Mixture will be stiff and may be mixed with hands. Cover and chill 3 to 3 1/2 hours. Heat oven to 375F. Using 1 1/2 tsp for each, rolll dough into loges 3" long and 1 1/2" in diameter. Place logs 2 inches apart on ungreased baking sheets. Bake 7 - 10 min. until golden brown. Remove from oven and transfer cookies to wire rack to cool. In the top of a double boiler combine the chocolate pieces, water and remaining 5/8 cup granulated sugar. Stir over hot water until chocolate melts. Add vanilla extract and remove from heat. Dip both ends of each cookie about 3/4" into the chocolate mixture and then into the choped nuts. Place on wax paper until chocolate has hardened.
