Ingredients
- 3 3/4 C water
- 1 tsp. salt
- 1 C quick cooking grits, not instant
- 1 C corn, fresh or frozen
- 3/4 C milk
- 1/2 C sharp Cheddar cheese, shredded
- 1/2 C Romano or Parmesan cheese, shredded
- 1/4 C scallions, chopped
- 1 T butter
- 1/4 tsp. Tabasco sauce
- 1/4 tsp. pepper

Preparation
Step 1
In saucepan, bring water and salt to a boil. Add grits and stir until smooth. Reduce heat to low then cook for 8 minutes, stirring occasionally. Stir in corn and milk and cook for 2 minutes longer. Remove from heat. Add the cheese, scallions, butter, Tabasco, and pepper to grit mixture; mix well. Serve immediately as a side dish with ham, pork chops, or omelets.
