Grandma's Cheesy Corn Grits

Ingredients

  • 3 3/4 C water
  • 1 tsp. salt
  • 1 C quick cooking grits, not instant
  • 1 C corn, fresh or frozen
  • 3/4 C milk
  • 1/2 C sharp Cheddar cheese, shredded
  • 1/2 C Romano or Parmesan cheese, shredded
  • 1/4 C scallions, chopped
  • 1 T butter
  • 1/4 tsp. Tabasco sauce
  • 1/4 tsp. pepper

Preparation

Step 1

In saucepan, bring water and salt to a boil. Add grits and stir until smooth. Reduce heat to low then cook for 8 minutes, stirring occasionally. Stir in corn and milk and cook for 2 minutes longer. Remove from heat. Add the cheese, scallions, butter, Tabasco, and pepper to grit mixture; mix well. Serve immediately as a side dish with ham, pork chops, or omelets.
