  • Salad
  • 1 head Romaine lettuce, torn
  • 4 oz. Swiss cheese, shredded
  • 1/4 C cashews
  • 1/4 C dried cranberries
  • 1 apple, diced
  • 1 pear, diced
  • Dressing
  • 1/2 C sugar
  • 1/2 C lemon juice
  • 2 tsp. onion, diced
  • 1 tsp. Dijon mustard
  • 1/2 tsp. salt
  • 2/3 C vegetable oil
  • 1 T poppy seeds

Preparation

Step 1

Salad
Wash and drain lettuce; tear into pieces. Wash, peel, core, and dice the apple and pear. In a large serving bowl, toss together lettuce, Swiss cheese, cashews, cranberries, apple and pear. Pour dressing over salad just before serving and toss well.

Dressing
In blender, combine all ingredients except vegetable oil, until well blended. With blender still running, slowly add oil until thick and smooth. Add poppy seeds and process a few seconds more.
