Ingredients
- Chicken Fried Steak:
- 4 6 oz. Cube Steaks
- Salt & Pepper
- 1/2 Cup All-Purpose Flour
- 2 Eggs
- 2 Tbsp. Whipping Cream
- 1 Cup Panko Bread Crumbs
- 3-4 Tbsp. Vegetable Oil
- Country Gravy:
- 1/4 Pound Pork Sausage
- 1/4 Cup Minced Onion
- 3 Tbsp. All-Purpose Flour
- 1/2 Cup Whipping Cream
- 2 Cups Chicken Broth
- 1/4 Tsp. Worcestershire Sauce
- 1/4 Tsp. Pepper
- 1/4 Tsp. Garlic Powder
Preparation
Step 1
Season both sides of the steaks with salt and pepper. Mix flour, 1 teaspoon salt and 1/2 teaspoon black pepper in small, flat dish.
In another small, flat dish, whisk the eggs and cream together.
Place panko crumbs in a third flat dish.
Dredge each steak in the seasoned flour, then in egg mixture and finally in panko crumbs. Allow to rest on a wire rack while oil is heating.
Heat the oil in a large, heavy skillet (cast iron works well). When the oil is hot, add the steaks and cook 3 to 4 minutes per side, or until golden brown and well done but not dry. Remove from skillet and keep warm while preparing Country Gravy.
In a small skillet that you fried the steaks, cook the sausage over medium heat until well-done. Drain all but 1 or 2 teaspoons fat, add the onion and saute until soft.
Add the flour and stir over medium heat, scraping up the browned bits from the bottom of the pain. Stir in the cream, chicken broth, Worcestershire sauce, pepper and garlic powder. Stir over medium heat until thickened. Spoon over chicken fried steak and mashed potatoes. Makes about 3 cups.
