chocolate ganache sandwiches

Ingredients

  • 1 12ounce bag semisweet chocolate chips
  • 2 cups heavy cream
  • 2 9ounce boxes wafer cookies

Preparation

Step 1

In medium saucepan, combine the chocolate chips and cream. heat over low heat, stirring occasionally, until blended. Transfer to a bowl and refrigerate until cool but not firm. (Recipe can be made to this point up to 2 days in advance. Allow mixture to soften before proceeding)

Beat chocolate mixture with an electric mixer until fluffy, 3-5 minutes. Form each sandwich with two cookies and 2-3 tablespoons chocolate mixture.
