italian wedding soup(Caroline)

Ingredients

  • 3 fryer chicken thighs
  • 1 small onion
  • 1 stalk celery
  • 2 carrots
  • 3 chicken bouilion cubes
  • salt
  • 3 qts water
  • 1/2 lb ground beef
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • acini de pepe noodles
  • optional
  • cut up escarole

Preparation

Step 1

cut in pieces-onion,celery, carrots

Place water and chicken into pot. Bring to boil. Add other ingredients. Simmer 1 1/2 hr cut up chicken pieces.

Beef, salt and pepper-mix into small balls, size of marbles

Fry in small amount of oil until brown. Add to finished soup.

bring water to boil, add noodles. Simmer 10 min. Add to soup.

optional
wash small amount of escarole. Cut up in pieces. Add to soup 5 minutes.
Add grated cheese when serving
