Peanut Butter Fingers

Ingredients

  • 1 pkg active dry yeast
  • 2 tbsp warm water
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 cup peanut butter
  • 1/4 cup butter, softened
  • 1/4 cup shortening
  • 1 1/2 cups flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 3 tbsp milk (more if necessary)
  • 1 tsp vanilla

Preparation

Step 1

1. Dissolve yeast in warm water in a large bowl. Mix in sugars, egg, peanut butter, butter and shortening until smooth. Stir in flour, baking soda and salt. cover and refrigerate for 30 mins.

2. Heat oven to 375F. Shape dough by tsps into 2 1/2" fingers on ungreased cookie sheet. Bake until light brown, about 8 mins.

3. Meanwhile, mix powdered sugar and cocoa in a bowl. Add milk and vanilla until smooth. Stir in more milk, if necessary, for desired consistency.

4. Dip one end of each cookie into cocoa glaze.
