Halibut Fish Sticks w/ Dill-Caper Tartar Sauce

Ingredients

  • 1/2 C mayo
  • 2-1/2 TBL chopped fresh dill
  • 2 TBL drained capers
  • 2 TBL chopped fresh chives
  • 2 TBL finely chopped dill pickles
  • 1 TBL pickle juice from jar
  • 1-1/4 C panko
  • 1 lg egg
  • 1-1/2 LBS 3/4" thick halibut fillets, cut into 3X3/4" strips
  • 3 TBL olive oil, divided

Preparation

Step 1

mix 1st 5 ingredients in bowl
season w/ pepper
cover & chill tartar sauce

spread panko on plate
whisk egg in sm. bowl
sprinkle fish w/ D & P
working in batches, coat fish in egg
coat in panko
shake off excess

heat 1-1/2 TBL oil in lg. nonstick skillet over med heat
add 1/2 of fish
cook, turning often, until fish is opague in center & golden on all sides - abt 4 min total

transfer to 2 plates, cover to keep warm
repeat w/ remaining oil & fish
spoon tartar sauce alongside
