Karen's Tomato Pie

Ingredients

  • 1 pie crusts
  • 2 ripe tomatoes, sliced
  • 1/2 lg Vidalia onions, thinly sliced
  • 1 c white cheddar cheese
  • 1/4 c mayonnaise)
  • 1/4 c sour cream
  • 1/2 T dried Italian seasoning)
  • (Salt & pepper to taste)
  • 1 lb grapes, halved
  • 1 lg can mandarin oranges, drained
  • 2 bananas, sliced
  • 2 oz bag pecan pieces
  • 3 T raspberry walnut vinaigrette dressing

Preparation

Step 1

Preheat oven to 325º. Pierce piecrust several
times w/ fork. Bake in oven for aprox 5-7 min then layer
tomatoes & onion in bottom of crust. In sm bowl mix 1/4 c cheese, mayo, sour cream & seasonings together.
Spoon evenly over tomatoes & onions. Sprinkle
remaining cheese overtop of pie. Bake for 45 min
or until firm. Let the pie sit for at least 10 min before
serving, in order to set and cool.
In a lg bowl combine fruit. Add dressing and toss.
Serve alongside tomato pies.
