Nutmeg Spinach Souffle

Ingredients
- 1/4 c corn starch
- 1/4 c margarine
- 4 eggs, yolks and whites separated
- 1 lb spinach, cooked, drained and chopped
- 1/4 c chopped onion
- 1/8 tsp nutmeg
- 1/4 tsp salt
- 1/4 tsp cream of tartar
- 3 tbsp parmesan cheese

Preparation
Step 1
Preheat oven to 400 degrees. Prepare sauce using corn starch and margarine. Remove from heat. Beating constantly, gradually add egg yolks. Stir in spinach, onion and nutmeg. In another bowl, beat egg whites, salt and cream of tarter until stiff. Fold into spinach mixture. Pour into greased 5-c souffle dish sprinkled with Parmesan cheese. Place on lower rack of oven. Reduce heat to 375. Bake 50 min until set
