Orange Stewed Chicken with Olives

Ingredients

  • 2 tablespoons butter
  • 2 chicken breasts
  • 1/2 onion, cut into thick slices
  • 1 pound halved baby ­Yukon gold potatoes
  • 1 cup fresh orange juice
  • 1 cup pitted green olives
  • 1 cup water
  • 1/3 cup raisins
  • salt, to taste
  • freshly ground black pepper, to taste
  • chopped fresh parsley.

Preparation

Step 1

Melt butter in a medium pot and brown chicken breasts on both sides over medium-high heat until golden, about 4 minutes each; transfer to a plate. Add onion and cook until softened. Add potatoes, orange juice, green olives, water, and raisins; season with salt and pepper, then arrange chicken on top and bring to a gentle ­simmer. Cover and cook until potatoes are tender, about 35 minutes. ­Sprinkle with parsley.
