Orange Stewed Chicken with Olives

Ingredients
- 2 tablespoons butter
- 2 chicken breasts
- 1/2 onion, cut into thick slices
- 1 pound halved baby Yukon gold potatoes
- 1 cup fresh orange juice
- 1 cup pitted green olives
- 1 cup water
- 1/3 cup raisins
- salt, to taste
- freshly ground black pepper, to taste
- chopped fresh parsley.

Preparation
Step 1
Melt butter in a medium pot and brown chicken breasts on both sides over medium-high heat until golden, about 4 minutes each; transfer to a plate. Add onion and cook until softened. Add potatoes, orange juice, green olives, water, and raisins; season with salt and pepper, then arrange chicken on top and bring to a gentle simmer. Cover and cook until potatoes are tender, about 35 minutes. Sprinkle with parsley.
