NANAIMO BARS # 2
This traditional treat is probably one of the most well-received gifts from the kitchen. To be certain the bottom layer doesn't crumble when cut, mix the ingredients very well and pack firmly.

Ingredients
- BOTTOM LAYER
- 3/4 cup hard margarine (or butter)
- 1/4 cup granulated sugar
- 6 tbsp cocoa
- 1 large egg
- 1 tbsp milk
- 1 tsp vanilla
- 2 cups graham cracker crumbs
- 1 cup medium coconut
- 1/2 cup chopped walnuts
- SECOND LAYER
- 1/4 cup hard margarine, softened
- 3 tbsp milk
- 2 tbsp custard powder (or vanilla pudding powder)
- 2 cups icing sugar
- ICING
- 4 semisweet chocolate baking squares
- (1 oz. each), cut up
- 1 tbsp hard margarine
Preparation
Step 1
BOTTOM LAYER: Combine first 6 ingredients in large saucepan. Heat and stir until mixture resembles custard. Remove from heat.
Add graham crumbs, coconut and walnuts. Stir. Pack firmly in ungreased 9x9 inch pan. Chill.
SECOND LAYER: Beat all 4 ingredients together in medium bowl until smooth. Spread over first layer. Chill.
ICING: Melt chocolate and margarine in medium saucepan on low, stirring often. Spread over second layer. Chill. Bring to room temperature before cutting to avoid cracking hard top layer. A hot dry knife helps.
