Corn Bread or Muffins*
- 1 C corn meal
- 1 C flour
- 1 tsp salt
- 1 C milk
- 4 tsp baking powder
- 1/4 C sugar
- 2 eggs
- 1/4 C melted butter or margarine
Sift flour with sugar, baking powder and salt. Stir in corn meal.
Beat eggs slightly. Add milk and melted butter. Combine with dry ingredients, stirring only until moist.
Pour into greased 9x9x2 inch pan. Bake at 425 degrees for 20-25 minutes.
For muffins: pour into well-greased muffin pan. Bake in hot oven (425 deg) for 15-20 min. Makes 12.
