Ingredients
- Cupcake:
- 1 Cup Sugar
- 1/2 Cup Unsalted Butter
- 2 Med Eggs
- 2 Tsp Vanilla Extract
- 1/2 Cup Flour
- 1/2 Cup Milk
- 1-3/4 Tsp Baking Powder
- 1/2 Cup crushed drained pineapple
- Frosting:
- 1 cup Unsalted Butter
- 3 tbsp coconut milk
- 3 ups powdered Sugar
- Blue Food coloring
- Blue and White sugar sprinkles to garnish
Preparation
Step 1
Set oven to 350
Cream sugar and butter until fluffy.
Add in eggs and vanilla.
Add in dry ingredients.
Add in pineapple.
Fill cupcake cups 3/4 full and bake for 15 minutes.
For frosting:
Butter at room temp food processor until creamy add in coconut milk and spoon in the powdered sugar until creamy and stiff. Add in food coloring. Pipe onto cooled cupcake.
