Mediterranean Tuna Noodle Casserole

  • 1/3 c olive oil
  • lb wide egg noodles
  • 2 red bell peppers thinly sliced
  • 1/2 c all purpose flour
  • 5 c whole milk
  • 4 (6oz) cans tuna in oil
  • 1 14oz can artichoke hearts
  • 5 thinly sliced scallions
  • 1 c parmesean



Step 1

preheat oven 400. grease 2 8" square pans. boil noodles until al dente. Drain and return to pot. In heavy sauce pan heat oil and add peppers,salt and pepper. Cook 4-5 minutes. Add flour and cook 1 minute. Gradually add milk, stirring often and cook until reach a simmer. Add sauce to noodles. combine with tuna,artichokes and scallions. Season. divide into pans,sprinkle with cheese. Bake 20 minutes. or can freeze. for frozen bake 2 hours uncovered 400 oven.
