Chili Con Queso

Ingredients

  • 1 lb. Velveeta cheese
  • 1 ¼ cups light cream
  • 1 4 oz. can chopped green chilies
  • ¼ cup finely chopped green pepper
  • 4 tsp. chopped pimento

Preparation

Step 1

Cut Velveeta cheese into chunks into top of double boiler. Add cream and chopped chilies. Cook green pepper for 2 minutes on high power in microwave. Add to cheese mixture along with pimento. Melt together, stirring frequently. Heat slowly. If heated too fast or too hot, cheese may go stringy. Serve warm with tortilla chips or pour over enchiladas, burritos, etc. Better to make a day ahead so flavors blend.
