Marinated Mushrooms

Ingredients

  • 1 1/4 lbs fresh button mushrooms
  • white vinegar
  • hot water
  • 1 1/2 T salt plus 2 t
  • 2 t peppercorns
  • 1/4 C olive oil
  • 2 t mace
  • 2 large cloves of garlic, quartered

Preparation

Step 1

Clean mushrooms by soaking in hot salted water (1 1/2 t salt) to cover for 5 mins. Rinse and drain and put in pan and cover with half white vinegar and half hot water. Boil for 5 mins. Drain and cool slightly. Put into clean 1 pt. mason jar. Add to jar: peppercorns, olive oil, 2 t salt, mace and garlic.

Fill with white vinegar and seal. Age in refrigerator for at least 48 hours.
