Pancetta, Tomato, Mozzarella, and Basil Panini

Ingredients

  • 8 slices crusty bread
  • 1/2 lb pancetta, sliced
  • 1-2 tomatoes, sliced
  • 1 ball mozzarella, sliced
  • Basil

Preparation

Step 1

Saute pancetta until crispy.

Brush 1 side of each piece of bread with olive oil. The olive oil sides of the bread will be on the outside of the sandwich.

Assemble the panini's by layering the pancetta, mozzarella, tomato, and basil in between the bread slices.

Grill the sandwiches, olive oil side down. Place a brick wrapped in tin foil (or a heavy pan) on top of the sandwich to press down while grilling.
