Ingredients

  • 3/4 cup butter
  • 6 Tablespoon's Hershey's cocoa
  • 1 cup sugar, divided, remove 1/4 cup to add to egg whites
  • 2/3 cup ground blanched almonds
  • 2 Tablespoons flour
  • 3 eggs, seperated
  • 2 Tablespoon's water
  • Chocolate Glaze (recipe follows)

Preparation

Step 1

Melt butter in medium saucepan over low heat. Stir in cocoa and 3/4 cup sugar; blend till smooth. Remove from heat and cool 5 minutes. Blend in almonds and flour. Beat in egg yolks, one at a time. Stir in water.

In a medium bowl, beat egg whites until foamy. Gradually add remaining 1/4 cup sugar, beating just until soft peaks form. Gently fold chocolate mixture into egg whites, blending thoroughly. Pour into greased and lined with waxed paper 9" cake pan. Bake at 350@ for 30 minutes or until tester comes out clean. Cool 10 minutes. ( cake will fall slightly. Remove from pan onto wire rack. Cool completely. Invert onto serving plate. Spread top and sides with chocolate glaze. Garnish with berries or unst drizzle with a little white chocolate. When set cover with plastic wrap and ref. Chocolate glaze, Melt 2 Tablespoons butter in small saucepan over low heat. Add 2 Tablespons cocoa and 2 Tablespoons water; Stir constantly until mixture thickens, Do not boil. Remove from heat; add 1/2 teaspoon vanila and gradually add 1 cup powdered sugar, beating with whisk till smooth. Immediatly ice cake. Keeps well in ref, for up to 1 week. Very fudgy, can also freeze. Enjoy! Grandma Matheny
