- 1.5 about 1.5 c potato starch
- 0.5-0.6 c sugar
- 0.5-0.6 c oil
- 1 T water
- 2 egg yolks
- Jam of your choice

With electric mixer, beat sugar, oil, water and eggs together. Add 1 cup sifted potato starch, and mix well. Add more potato starch slowly, and keep mixing. Dough will be a bit sticky. Place by rounded teaspoon onto greased cookie sheet. Bake at 350 for about 15-18 min. The tops of the cookies will be cracking. Once cooled off, match like-sized cookies, put about 3/4 t of jam on the bottom of one, and place another cookie on top of that, upside down. This is not a big recipe, so I would double it next time.
