Greens with Warm Dressing

Ingredients

  • 1 red onion, chopped
  • 3 cloves garlic, finely chopped
  • 4 tablespoons extra-virgin olive oil
  • 1/3 cup white balsamic vinegar
  • 2 teaspoon coconut sugar or honey
  • 1 teaspoon dijon mustard
  • Kosher salt and freshly ground pepper
  • 1 pound spinach or other greens; tough stems removed

Preparation

Step 1

In a large skillet, saute chopped onion in olive oil; add in chopped garlic and saute until fragrant.

Whisk the vinegar, sugar, mustard, and 1/4 teaspoon each salt and pepper and add to skillet.

Place the spinach in a large bowl and pour the warm dressing on top and toss. Season with salt and pepper. Top with croutons.
