Zucchini, Sauteed Sherry

Ingredients

  • 4 small zucchini
  • 1 tsp salt
  • 1/4 tsp dill weed
  • 1/4 tsp celery seed
  • 1 Tbsp olive oil
  • 1 clove garlic, halved
  • 1/4 cup California dry Sherry

Preparation

Step 1

Clean zucchini with vegetable brush, but do not peel. Slice zucchini into 1/2" slices. Sprinkle salt, dill weed and celery seed on zucchini; let stand 10 mins. In heavy skillet, saute garlic until browned; discard. Add zucchini to hot oil in skillet. Cover and saute 3 mins, shaking skillet frequently. Discard excess liquid. Add Sherry. Reduce heat, cover and simmer 5 mins.
