BEEF NOODLE SOUP

Complete with tomatoes and vegetables. A good meal. May be halved. Freezes well.

Ingredients

  • 1 1/2 lbs. meaty beef soupbone
  • 7 cups water
  • 1 tbsp salt
  • 1/2 tsp pepper
  • 28 oz. canned tomatoes, mashed
  • 1/2 cup sliced carrot
  • 1/4 cup sliced celery
  • 1/2 cup sliced onion
  • 1 tsp parsley flakes
  • 1/2 tsp granulated sugar
  • Egg noodles or broken spaghetti or vermicelli

Preparation

Step 1

Put soupbone, water, salt and pepper into pot. Bring to boil. Cover and simmer for 1 1/2 to 2 hours. Skim if needed. Remove meat from bone. Cut into bite size pieces or smaller. Return to stock. Discard bone.

Add next 6 ingredients. Simmer for 20 minutes.

Add noodles and simmer for 7 minutes more.
