Homemade Mayonaisse

Ingredients

  • 2 large pasteurized eggs yolks
  • 1 t white wine vinegar
  • 1 t lemon juice
  • 1/2 t kosher salt
  • 1/4 t onion powder
  • 1/4 t Dijon mustard
  • 1/4 t hot sauce
  • 1/8 t sugar
  • 1 c canola oil

Preparation

Step 1

Beat first 8 ingredients at high speed using whisk attachment, 15 seconds or until combined. With mixer running, add oil in a vey slow, steady stream, beating until smooth and thickened. Add water, 1 t at a time to thin as desired. Makes 1 c.
