Kathy's Sweet and Sour Chicken

Ingredients

  • 6 medium carrots, cut into 1/2 inch chunks or strips.
  • 1/2 cup finely chopped green bell pepper
  • 1/4 cup finely chopped onion
  • 6 chicken breast halves, with or without skin
  • 1/2 teaspoon salt
  • 1 (10 ounce) jar sweet and soour sauce
  • 1 (15 ounce) can pineapple chunks, drained
  • 2 tablespoon cornstarch

Preparation

Step 1

Place all ingredients in slow cooker or crockpot with chicken on top. Cover and cook on low 6 to 8 hours. Remove chicken and thicken juices with 2 tablespoons cornstarch dissolved to make a medium thick passte with a little cold water. Pour sauce over chicken breasts, or remove chicken from bone and stir into sauce mixture. Serve with hot cooked rice.
