Scotch Eggs

Ingredients

  • 8 Medium Eggs
  • 1 pound ground pork
  • 1 1/4 cups fresh breadcrumbs
  • 1 tsp. dried thyme
  • 1 tsp. ground allspice
  • Salt and pepper
  • 1/2 cup all purpose flour
  • 3 tab. Milk
  • 6 cups oil

Preparation

Step 1

Hard boil eggs, cool, shell!

Make mix of pork, crumbs, 1 raw egg, thyme, allspice, salt and pepper. Mix with hands to combine. Use damp hands to form patties, about 3 oz., and flatten. Place one peeled hard boiled egg in center of patty and form around the egg.

Dust each egg with wrapped with flour. Whisk together remaining raw egg and milk in a shallow bowl. Place remaining cup of breadcrumbs in a shallow bowl. Roll eggs in milk egg wash, then in crumbs to coat. Heat oil in large, deep saucepan, fry eggs until meat mixture is golden and cooked through. Drain on paper towel! Serve warm or at room temp.
