Pecan Shortbread Cookies

Ingredients

  • 1 cup butter (2 sticks)
  • 1 t vanilla
  • 3/4 brown sugar
  • 2 1/2 cups flour
  • 1/2 c chopped pecans

Preparation

Step 1

Place butter, vanilla, brown sugar in mixing bowl. Attach bowl and flat beater to mixer. Turn to Speed 6 and beat 1 minute. Stop and scrap bowl.

Turn to Speed 2 and add flour then beat 30 seconds. Stop and scrape bowl. Turn to Stir Speed and quickly add pecans, mixing until just blended.

Shape dough into a log 1 1/2 inches in diameter. Wrap in waxed paper and chill 20 minutes. Slice dough into 1/2inch thick cookies. Place on greased baking sheets. Bake at 325 for 18-20 mins. Cool on wire racks.
