Ingredients
- 2 –3 lb. pork roast
- splash of olive oil
- 1 small onion, diced
- 1 1/2 cups water
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon ginger
- 1/2 teaspoon celery seed (optional)
- 1/4 teaspoon pepper
- 3 – 4 large yams or sweet potatoes, cut into large chunks
Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Add a splash of olive oil to a Dutch oven or large, oven safe pot. Add onions and pork roast and brown both sides over a medium-high flame.
3. While the meat is browning, mix water, soy sauce, sugar, and spices in a small bowl.
4. Once the meat is browned, pour the liquid over the meat. Place lid on pot and place in oven. Cook for 1 hour.
5. Add the cut yams to the pot and use a baster to coat them with the sauce. Place lid back on pot and cook for an additional 30 minutes or until the roast reaches an internal temperature of 160 degrees.
