Ingredients
- 3/4 cup sugar
- 2/3 unsweetened applesauce
- 1/4 cup egg substitute
- 1/4 cup vegetable oil
- 1/2 teaspoon salt
- 3/4 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 cup low fat buttermilk
- 2 cups flour all purpose
- 2 teaspoons baking powder
- 1/2 cup chocolate chips
- may use m & m's
- mint chocolate chips
- peanut butter chips
- also can sub 3/4 teaspoon butter rum extract for vanilla
- and heath bar bites for the chocolate chips for a butter rum muffin
- can also add 1/4 cup of chopped walnuts to the chocolate chip batter
Preparation
Step 1
Preheat oven to 325 degrees
in a large bowl mix together sugar, applesauce, egg, oil, salt, vanilla, and baking soda
add buttermilk and blend well
in a separate bowl sift together the flour and baking powder
add the dry ingredients to the wet and mix well with an electric mixer
add half of the chocolate chips t the batter and fold them in by hand
to bake the muffins use a Texas size muffing pan lined with jumbo papers
top muffins with remaining chocolate chips
Bake jumbo muffins about20 to 24 minutes
regular size muffins take about 16 to 20 minutes
