SALMON****Poached Salmon With Dill Horseradish Sauce

Very good for both. Dan even liked the sauce (and didn't ask for Tartar) so it's worth a re-do. Easy make ahead
22/7/14 - Update - I didn't make the sauce and when it came time to eat the fish, it wasn't working for me. I wound up using it for salmon salad Sandwiches - see recipe. Good use of the fish. I had a salmon steak from Tarini's.

Ingredients
- Poached Salmon:*
- 1 cup white wine
- 1 cup chicken or vegetable stock (or water)
- 1 onion, coarsely chopped
- 1/2 small bunch dill
- 3 sage leaves
- 2 bay leaves
- 1 lemon, quartered
- salt and cracked black pepper
- 12 oz. salmon filets or steak (half for this recipe, half for another)
- Dill Horseradish Sauce:*
- 1 tablespoon finely chopped dill
- 1 tablespoon prepared horseradish
- 1 tablespoon lemon juice
- 2 tbsp. greek yogurt
- 2 tbsp. mayonnaise
- salt and cracked black pepper
- Sliced chives, to garnish, if available
Preparation
Step 1
*Bring* a kettle of water to a boil. *Heat* white wine, stock, onion, dill and bay leaves in a large skillet and bring to a simmer. *Add* lemon quarters to liquid squeezing each one into the skillet before adding it, then simmer for 15 minutes. *Season* to taste with salt and pepper.
*Add* salmon, skin side down, to the simmering liquid. *Using* the hot water from the kettle, add additional water if necessary to cover the salmon. *Cook* until salmon is just cooked though, about 8 minutes. *Remove* from liquid and let sit for 15 minutes. Cover and refrigerate until serving time, if serving cold or serve immediately, if serving hot.
*Dill Horseradish Sauce:*
*In a small bowl* mix together dill, horseradish, lemon juice, yogurt and mayonnaise and season to taste with salt and pepper.
*Divide* the salmon between 2 plates (reserving half for another meal or to make salmon rilettes or salmon salad sandwiches), top with dill horseradish sauce and sprinkle with chives.
