Roasted Sweet Potato Spears

Ingredients

  • 4 pounds medium sweet potatoes (about 7)
  • 1/2 pound sliced bacon, cut crosswise into 1/2 inch strips
  • 1/2 teaspoon salt

Preparation

Step 1

Put oven rack in upper third of oven

Peel sweet potatoes, then cut each lengthwise into 6 spears.

Cook bacon until browned and crisp. Pour bacon through a strainer. Toss sweet potatoes with bacon grease. Arrange potatoes in 1 layer in a large shallow baking pan. Sprinkle with salt. Roast,uncovered, turning every 20 minutes, until potatoes are tender and edges are browned, 45 minutes to one hour. Transfer to a serving dish.


Additional part I didn't use: return bacon to cleaned skillet, then add 1/4 cup olive oil and heat over moderate heat until hot, but not smoking. Stir in white part of 3 scallions and remove from heat. Stir in 2 tablespoons Sherry vinegar, 1 tablespoon water, 1/2 teaspoon salt and pour over potatoes. Sprinkle potatoes with scallion greens and serve warm.
