Ingredients
- olive oil
- 1 large onion
- 1 large shallot
- 6 cups cauliflower florets (about 1 large head)
- 1 large package fresh spinach (11 oz)
- 3 (15.5 oz) cans chickpeas, drained and rinsed
- 3 8-oz cans tomato sauce
- 1 can tomato paste
- 1/2 cup white wine vinegar
- 2 tablespoons minced ginger
- 3 tablespoons curry powder
- 2 cloves garlic, minced
- 3 teaspoons ground cumin
- 1 teaspoons ground cinnamon
- 2 cup chicken or vegetable broth
Preparation
Step 1
Brown onion and shallot in olive oil in pressure cooker. Add remaining ingredients and stir well. Cook on high pressure for 5 minutes.
