Ingredients

    cup cornmeal (yellow)

  • 2/3

    cup flour

  • 1

    Tbsp Baking powder

  • 1

    tsp. salt

  • 3

    Tbsp sugar

  • 1

    cup milk

  • 1

    egg

  • 1/3

    cup oil (plus more for pan)

Directions

Mix dry ingredients together. Mix wet ingredients and add to dry, stirring until just combined. Heat 10” cast iron skillet in oven until very hot (5 to 10 minutes). Add a couple of tablespoons of oil to hot skillet. Pour cornbread mixture into hot skillet and cook at 425 for about 25 minutes. If you want to make buttermilk cornbread decrease baking powder to 2 1/2 tsp. and add 1/2 tsp baking soda. I always add about 1/4 cup more buttermilk too. Turn out to a rack immediately so crust will stay nice and crisp.
