Bacon, Spinach and Orange Salad (L'Academie de Cuisine)

Ingredients
- Salad:
- 2 strips bacon, cut into strips (lardon)
- 1/4 cup sliced almonds, lightly toasted
- Sections of two Oranges (reserves the rest for juice)
- 4 cups baby spinach leaves
- Citrus Vinaigrette:
- 1 egg yolk
- 1 TB dijon mustard
- 1 TB white wine vinegar
- 1 TB orange juice
- 1/4 cup olive oil
- 1 TB finely chopped shallot
- pinch of fresh thyme leaves
- salt & pepper
Preparation
Step 1
Salad:
Preheat oven to 350 degrees. Place bacon on a sheet tray and bake until crispy. Drain bacon and allow to cool.
Toast sliced almonds in pan over medium-low heat.
Cut orange slices in half. In a large bowl, toss together spinach, bacon, almonds and orange slices. Toss with vinaigrette and season to taste.
Citrus Vinaigrette:
Place yolk in a stainless steel bowl along with 1 TB water. Place bowl OVER a pot of simmering water and whisk yolk until warm and frothy.
Add mustard, whisk. Add juice and vinegar, whisk. Gradually whisk in olive oil. Add shallot and thyme.
Season to taste.
Toss with greens.
