Italian Pizzelle Cookies

Ingredients

  • 1 dozen eggs (room temp)
  • 1 pound butter (room temp)
  • 3 cups sugar
  • 2 tbsp. baking powder
  • 1 SMALL bottle anise extract (1 fl. oz.)
  • 8 cups flour

Preparation

Step 1

Preheat pizzelle griddle. Beat eggs, add sugar gradually and beat well. Add butter and anise. Sift flour and baking powder and add to creamed mixture. Dough will be very sticky. CHILL IN FRIDGE.
Work with small amounts at a time, drop by tbsp. onto griddle. Cook until steam stops and cookies are a golden brown. Cool on wire racks and store in air tight containers.
